Job Role: Executive Pastry Chef

PRE-OPENING ROLE 

Due to the current VISARESTRICTIONS only candidates from within the UAE with a current UAEResidence Visa can be considered for thisvacancy 

AnExecutive Pastry Chef will build a reputation for the hotel bymaintaining a talented and creative kitchen brigade, offering aninnovation menu, and promising an exceptional culinaryexperience.

As Executive Pastry Chef, you arefully responsible for developing the reputation of the hotelthrough the production of excellent quality food throughout thehotel, and the development of a high quality of pastry and kitchenbrigade. An Executive Pastry Chef will oversee the operationalmanagement of the kitchen and Team Members. Specifically, anExecutive Pastry Chef will perform the following tasks to thehighest standards:

  • Lead of thekitchen brigade and ensure ongoing development of TeamMembers
  • Identify an effective approach tosuccession planning
  • Create menus that meet andexceed customers' needs and conform to brandstandards
  • Ensure the consistent production ofhigh quality food through all hotel food outlets
  • Develop positive customer relations through proactiveinteraction with Guests, Team Members, contractors, andsuppliers
  • Resolve, promptly and completely,any issues that may arise in the kitchen or related areas amongGuests and Team Members
  • Manage all aspects ofthe pastry kitchen including budgeting, forecasting, resourceplanning, and waste management 
  • Manage all aspects of the pastry kitchen includingoperational, quality and administrative functions
  • Actively seek verbal feedback from customers on a regularbasis and respond to all guest queries in a timely and efficientmanner
  • Ensuring adequate resources areavailable according to business needs
  • Managethe provision of food to Food and Beverage outlets and takingaction where necessary to ensure compliance with currentlegislation
  • Control costs without compromisingstandards, improving gross profit margins and other departmentaland financial targets
  • Ensure team members havean up-to-date knowledge of menu items, special promotions,functions and events
  • Maintain goodcommunication and work relationships in all hotel areas
  • Ensure that staffing levels are maintained to coverbusiness demands
  • Ensure monthly communicationmeetings are conducted and post-meeting minutesgenerated
  • Manage staff performance issues incompliance with company policies and procedures
  • Recruit, manage, train and develop the kitchenteam
  • Comply with hotel security, fireregulations and all health and safety and food safetylegislation
  • Ensure maintenance, hygiene andhazard issues are dealt with in a timely manner
  • Ensure excellent quality through out dessertoffering
  • Manage financial performance of thedepartment so all planning is in line with hotelobjectives
  • Manage food control systems areadhered to them  so margins are on target in a pro-activeway
  • Regular review of all menus with Food andBeverage manager to confirm offerings are in line with markettrends
  • Be environmentally aware
  • Ensure food wastage program is adhered to so that marginsare on target
  • Responsible for ensuring thatthe monthly working schedules are made and maintained in accordancewith local legislation

Tosuccessfully fill this role, you should maintain the attitude,behaviours, skills, and values that follow:

  • Previous, relevant experience as an Executive Pastry Chefor a high-performing Pastry Sous Chef in a first class property,required
  • Excellent leadershipskills
  • A creative approach to the productionof high quality food
  • A business focusedapproach to managing a hotel kitchen
  • Excellentcommunication skills
  • Ability to buildrelationships, internal and external, to the hotel and theCompany
  • Excellent planning and organizationalskills
  • Ability to multi-task and meetdeadlines
  • A current, valid, and relevant tradequalification (proof may be required)

It would be advantageous in this position for you todemonstrate the following capabilities and distinctions:

  • A certification in management
  • Proficiency with computers and computer programs,including Microsoft Word, Excel and Outlook
